I think the only hard part would be picking the packages that suited the most people, specifically desktop environment. Maybe start a poll topic or turn this one into a poll too and see what people like the most.

IMHO, a desktop version should just be a second option to the base install version.

Yes, I agree.
Maybe a start could be someone with raspbian doing equiv of pacman -Qq to see what is there.

We don't need to mirror what they're doing, just have to choose the packages that will draw the least amount of nerd rage.
