Happy to say that my problem is solved. It seems that my USB drives had some remnants of gparted (since I had originally formatted with it). When I originally fired up fdisk, it gave me some warning about gparted data, but I thought that fdisk would wipe that out. That isn't the case. I had to use gdisk to wipe the USB drives clean, then followed the original instructions and was able to get going just fine. Thanks for the help!
