New Boot Device

Right,
Having got my plug up and running using a spare 120GB IDE hdd and a cheap USB caddy my shiny new 16gb key & 2tB (usb) drives arrived this morning.

I think I'm right in saying I can just copy everything to the USB key, disconnect the old HDD and reboot - will that work? If so do I need to use dd or cp to do the copying?
