USB Microphone and Speech-to-text Software

Can anyone recommend a good USB microphone for the Raspberry/Raspbian? Specifically, I'd like to take my study notes verbally (into the microphone) and have a speech-to-text package enter it into my editor.

So, that leads to the second question - which I will ask on a more appropriate forum if needed - Can anyone recommend a good speech-to-text software package that will work with the microphone?
