Hello all.
I got it. My GFH works absolutely fine.
First I tried to set the PARTUUID -- above mentioned by moonman.
It is very simple to do this -- start gparted and check the option and commands for the PARTION.
There you can create a random UUID for the PARTion -- that's the PARTUUID.

After that the boot process didn't work -- nothing worked at all.
I decided to install ArchLinux from scratch
* I used Knoppix -- gparted
* I deleted the partion and created a new one -- one partion with 3TB.
* then I downloaded the latest ArchLinux
$this->bbcode_second_pass_code('', '
wget http://os.archlinuxarm.org/os/ArchLinuxARM-kirkwood-latest.tar.gz
')
* used tar to extract the tgz file
$this->bbcode_second_pass_code('', 'tar -xpf ArchLinuxARM-kirkwood-latest.tar.gz')
* with tar I got some warnings -- but anyhow -- it worked
* I inserted the HD to the GFH cradle and booted ArchLinux -- with the serial cable
* all went well

In the conclusion I can say that the serial cable is absolutely necessary and nothing else is that important.
The boot sequence is very important to identify the problems.

By the way -- I had some problems in building the serial cable. Especially to identify the correct pinning and find the correct USB-TTL converter.
