I'm aware of $this->bbcode_second_pass_code('', 'setenv nographics "1"') but I would like to remove all Xorg and desktop applications from my Odroid-C2 system?
Is there a way to install without any X/desktop apps in the first place?

Pretty sure the default image does not contain any xorg packages. Recommend you consult the Arch wiki Xorg page and pacman page.
