In the installer you mount boot and root in seperate spaces and extract then copy boot from root to boot. Why not just mount root, create root/boot, mount root/boot and untar?

Essentially? This small exercise leaves the installee with a more distinct knowledge that it is a different partition. Some people miss this, easily.
