reboot, rerun, result looks identical to me

That's where you would type that in. You can then "Map Network Drive" so it will show up in my computer.

I get a prompt to enter network password with user name and password, and a domain set as my computer name. Using root, or one of the users I set up just reprompts me to enter the information again.

Hmm, that shouldn't happen unless you set your network as public in Win7... also in
ControlPanel\Network and Sharing Center\Advanced sharing settings
make sure Password Protected Sharing is off and Enable File sharing for devices that use 40- 56-bit encryption is checked. It shouldn't matter, but just in case... did you change the samba config file at all? re-check it again and make sure it's correct, but shutdown samba first.

Adjusted control panel settings to match, checked the samba config, for whatever reason it had blanked itself out. Attempted to log in again through win7, no luck.

You've been a great help moonman, I had no idea how deep of a rabbit hole linux would be. I need to catch some sleep before work tomorrow, but I'll be posting updates as I'm available. Thanks for all the help everyone.

No worries.You would have to start samba again after editing the config

Marginal success, I still cannot log into it through windows 7 explorer, but it has shown up under my computer as a media server, and opening its web page presents me with the above image. I'm thinking something is wrong with my minidlna config or there is another step still missing. I'm off to work, so I'll be back around 9pm Eastern Standard Time.

That's not samba but the minidlna daemon that you setup before. Minidlna is basically meant to serve files to media players that dont support direct sharing.
